Chickpea Kale Wraps: My Go-To Lunch
I absolutely love an easy, hearty, and delicious lunch that I can chow down relatively quickly.
This one's been on the rotation for a while now - I never get tired of it, and it's so easy to switch up the greens (lettuce, arugula, shredded cabbage, etc), the beans (black, pinto, lentils), and everything that goes inside.
I could have this as a big, crunchy salad too, but why spend all that time stabbing my fork into a large salad bowl to pick up a few pieces of kale at a time when I can just enjoy this in wrap form? š
WHAT'S IN THE WRAP:
- Ezekiel wraps (sprouted grains + lentils = optimal protein source and sprouted for even more nutritional power)
- Chickpeas (any legume or lentil)
- Kale, shredded (or any green like arugula, beet greens, spinach, lettuce, cabbage)
- Pickled pepperoncinis
- Vegan mayo (for that rich flavor that takes this from a 3/5 to a 5/5)
- Mustard
- Homemade pesto (pine nuts, cilantro, basil)
- Squeeze of lemon
- Salt & freshly cracked pepper
For dessert, I have fruit. Then, an afternoon tea or sparkling water as I get back to work.
