Lemon Blueberry Cake
I'm always skeptical of healthy so-called 'cake' recipes, but this one - by Broccoli Mum - hits the mark. I tested it out, measured out the ingredients, and instead of microwaving it (which she recommends for about 7-8 minutes), I baked it in my toaster oven.
It's true that you really can't taste cauliflower or tofu at all. It's not overly sweet, so if you like it sweet, you may want to increase the sweetener, but personally this was just sweet enough.
INGREDIENTS:
- 2 cups cauliflower, boiled/steamed/microwaved
- 1 ripe banana
- 1 cup rolled oats
- 1 cup soy milk
- 1/4 block tofu (firm, medium, soft, or silken)
- 2 tbsp maple syrup
- 1 tbsp chia seeds
- 1 tbsp baking powder
- Juice of a lemon, plus its zest
- Pinch of salt
- 1.5 cups blueberries (frozen or fresh)
DIRECTIONS
Preheat oven to 400F.
In a blender, blend all ingredients except blueberries until smooth.
Pour into an oven-safe dish. Add 1 cup of blueberries and mix gently. Then top with the remaining 1/2 cup blueberries.
Bake for 40 minutes. Let cool, then enjoy!

You may be surprised by the inclusion of B12 in this recipe - it's coming from the soy milk, which is fortified with it.
The high vitamin C comes mostly from the cauliflower (then blueberries and lemon juice).

Now this one really surprised me when I saw how much calcium was included. I assumed it was from the soy milk and tofu, but more than 80% of the calcium in this recipe comes from just 1 tbsp of baking powder!

Overall, this is an excellent way to have your cake and eat it too. š
As with many recipes, this one gets tastier after a day or two in the fridge. Not only is this a nutritionally packed treat, but the resistant starch content will also increase after being refrigerated, which will support a healthy gut, a stronger immune system, and weight loss.
