Miracle Soup

The soup of all soups.


This miracle soup hits the spot every single time. Particularly useful for kicking colds, flus, or other viruses to the curb, this soup comes complete with antioxidant, healing powers and soothing flavors.


For body ache relief, try adding a dash of ground turmeric which has anti-inflammatory effects and a boost of extra nutrition that your body may be craving.


Ingredients:
  • White onion, chopped

  • 2-5 cloves of garlic, chopped or minced

  • 1/2 inch knob of ginger, minced

  • 1 jalapeno, sliced

  • Large handful of cilantro, roughly chopped

  • 2-5 potatoes, cubed or roughly chopped

  • 2 Not-Chick'n bouillon cubes, crumbled with your fingers

  • Juice of 2 limes

  • 1 ripe avocado, cubed or sliced

  • 6-8 cups of water

  • Salt and pepper to taste


Add ons:

To make this into a heartier meal (instead of a starter, side, or snack), include a whole grain like brown rice and/or legumes like beans and/or small pasta (eg. shells, rotini, fusilli, macaroni, etc). Or enjoy this soup with a side of bread.


Cook grains, legumes, and/or pasta separately.


Note:

You can use any onion (red, yellow, white) and increase the amount of garlic and/or ginger. If you don't like it spicy at all, omit the jalapeno. You can also feel free to add any other vegetables like chopped carrots, celery, mushrooms, etc. If adding dark leafy greens like chopped kale, add at the end just before serving.

Directions:

S T E P 1

In a large pot, saute onion until translucent, about 5 minutes. Add garlic, ginger, and jalapeno and saute for 2 minutes. Keep mixing so these delicate plants don't burn as you saute.


S T E P 2

Add potatoes, bouillon cubes, and water. Bring to a boil, then turn down heat to a simmer and let cook for 15-20 minutes until potatoes are cooked through.


S T E P 3

Add some of the cilantro keeping some to top your bowls with. If adding beans, add them now.


S T E P 4

Add the juice of one lime to start into the soup. Squeeze more lime juice if you want more acidity in the soup. Add salt and pepper to taste.


S T E P 5

Add soup to a bowl. Top with fresh cilantro and avocado. Enjoy!


Storage:

Once any leftover soup's cooled down, store in an airtight container in the fridge and enjoy within three days.
